Honey Apple Pie
Pie Crust:
3 cups of flour
1 teaspoon of salt
1 cup of lard
1 tablespoon of vinegar
1/3 cup of cold water
1 beaten egg

Sift flour and salt together, add lard and blend in a pastry blender until it looks like small peas. Add vinegar, cold water, and beaten egg and blend until a ball forms. Refridgerate overnight or for at least one hour until ready to roll into crust.

Filling:
1 cup honey
4 tablespoons flour
1 tablespoon cinnamon
1/8 teaspoon salt
6 cups peeled and sliced apples
1 tablespoon lemon juice
2 tablespoons butter

Combine honey, flour, cinnamon and salt. Spread 1/2 of this mixture over pastry, add apples. Sprinkle remainder of mixture over top of apples. Sprinkle with lemon juice and dot with butter. Add top crust and seal edges. Bake at 425 degrees for 30 to 40 minutes.
